Co-Owner
Born and raised in Toluca, Mexico, Larry Gonzales grew up surrounded by the flavors, colors, and traditions that
now inspire his work behind the bar. Moving to New York City allowed him to merge those roots with the precision and creativity of high-end mixology,
working in some of the city’s most respected cocktail programs and honing his skills to world-class standards.Larry is now the co-owner and beverage director of Coyote Bohemio, where his goal is to bring Ridgewood a true cocktail destination — a place where well-made classics meet bold,
inventive creations inspired by hisMexican heritage and global experience. His work has been featured in publications including Time Out NY, Eater NY, Forbes, Greenpointers, Better Homes & Gardens, Whisky Advocate, and NYC Tourism, highlighting his contributions to NYC’s cocktail culture and his innovative approach to drink design.
Larry’s Background in NYC’s Bar Scene
Larry’s bartending career took shape behind some of NYC’s most respected cocktail bars:
- Please Don’t Tell (PDT) – Larry trained under some of the city’s best bartenders at this world-famous speakeasy, building his foundation in classic cocktails and hospitality.
- Hear & There (Williamsburg) – Currently serving as Beverage Director, Larry designed the entire cocktail program for this Japanese-inspired listening lounge and omakase concept. His drinks here — including Nightfall, High Frequency, and Rice & Nori — have been celebrated in major NYC food & drink media.
- Other Collaborations – Larry has consulted on cocktail menus for pop-ups, private events, and seasonal programs, always bringing a balance of tradition and innovation to every project.
This experience gave Larry the tools to elevate Ridgewood’s bar scene — while staying true to his roots.
Larry’s Signature Cocktails at Coyote Bohemio
Larry’s menu at Coyote Bohemio is a love letter to both Mexico and NYC, showcasing drinks that celebrate agave spirits, fresh ingredients, and creative presentation:
- T.M.T – Tequila, mezcal, and tepache (a lightly fermented Mexican pineapple drink) finished with lime and a tajín rim for a sweet-sour-spicy kick.
- Señor Sandía – Tequila blanco, muddled watermelon, lime, and pulque (a lightly fermented agave drink) for a slightly earthy, refreshing finish.
- Conejo Rojo – Mezcal, hibiscus, fresh citrus, and ginger beer — a smoky, floral, and sparkling cocktail that’s as striking visually as it is in flavor.
- Oaxacan Old Fashioned – A smoky, elegant riff on the classic, with mezcal, reposado tequila, agave nectar, and bitters.
- Chicha Sour – A vibrant, purple-hued cocktail made with Peruvian chicha morada, pisco, lime, and a foamy egg white top — tart, aromatic, and refreshing.
- Espresso Martínez – A bold spin on the classic espresso martini, featuring dark rum, tequila, coffee liqueur, and fresh espresso — smooth, slightly smoky, and perfect for after dinner.
